Which direction do you move around a table?
Clockwise
How many standard pours are there in a bottle of wine?
- 5 pours per bottle
- Standard pour is 5 fl oz / 150 ml
- Standard bottle is 25 fl oz / 750 ml
- 25/5 or 750/150 = 5
In which order do you serve wine to guests at a table?
After host tastes and approves:
- Guest of honor is served first
- Proceed clockwise around table
- Host is served last

Yes, it is acceptable to use an LED or smartphone flashlight to decant wine.
How do you prepare for sparkling wine service?
- Prepare an ice bucket with a mixture of ice AND water
- TWO serviettes - one for opening and wiping, the other to leave behind with the opened bottle
- TWO coasters - one for the cork, one for the bottle
- Wine key - For cutting the foil
- Bring glassware to the table before other items
- Bring remaining items - Sparkling wine should already be in the bucket
What is a muselet?
The wire cage over a sparkling wine cork.

How many times must you untwist the muselet?
6 half turns to loosen.
Note: Do NOT remove before opting the bottle!
To fill a glass with sparkling wine, should you pour twice in a guest’s glass? Or walk around the table twice?
Pouring twice is preferable to walking around the table twice.
Reasons to decant wine? (5)
- Separate liquid from sediment*
- Aerate the wine
- Adjust temperature
- Rectify reduction issues

*Sediment can come from unfiltered/unfined wine OR aged wine

- One to line the cradle
- One to help extract cork and wipe the lip
- One to wipe decanter after pouring into glass
What is double decanting?
Transferring wine from a decanter back into its original bottle.
What is splash decanting?
Tip the bottle vertically over the decanter to introduce as much oxygen as possible. Done for reductive wines — NOT for sediment.
