A

Palomino White.

Notes: Uses a Solera stacking barrel aging system. Fortified after fermentation.

Dry Sherry
Fino. Ages under yeast Flor to 15% abv before Solera. Biscuit. Bread Dough. Loses freshness after bottling. Chilled.

Amontillado. Short Flor fortified to 17% abv(kills yeast) before Solera. Oxidative Age for Walnuts. Caramel.

Olorosoo. No Flor fortified to 17%. Oxidative Age for Raisins. Prunes. Walnuts. Caramel.

Sweet Sherry
Fino + Sweet = Pale Cream
Amontillado + Sweet = Medium
Olorosoo + Sweet = Cream

Pedro Ximenez (PX) is appassimento PX Grapes via Sun Drying. Fig. Prune. Raisin.
PX is used to sweeten Dry Sherry.
