Zuckerman farms Yukon gold are mashed with strays sour cream and butter. Fully loaded option is available at no extra cost. This includes chopped bacon, chive and broiled cheddar cheese.

Beans

Yellow wax and Romano beans are blanched pre-service. Sautéed with Calabrian chile sofritto (garlic, shallot, olive oil, Calabrian chile) bacon fat, butter, lemon juice, parsley and chopped bacon. Bacon can be left off.

Anson mills polenta is cooked with veg stock, mascarpone, butter, cream and Parmesan.
