Lobster Bisque
Thickened with rice(white rice is puréed), lobster shells, mire poix(sweated), tomato paste,sherry.
Lobster salad is placed in bowl with paprika oil.
Lobster salad=knuckle/claw/leg meat,shallot,fennel
Paprika oil=garlic & herbs
Bisque poured into bowl at table.
Turtle Broth
Wild WI snapping turtle, chicken broth, wild rice, mire poix(carrot,onion,celery),salsify relish(wine,garlic,artichoke,shallot,salsify)
Cream of Bolete Mushroom
Thickened with potato & cream
Celery, onion,leek,potato, veggie stock, Chilean boletes( pores not gills)
Brioche croutons, chives.
Wedge
Gem lettuce(baby romaine.
Buttermilk Blu Chz(WI) dressing(mayo base)
Shallot crisps- dredged in flour $ fried
Apple beet relish - diced hard baking apples(gala, etc) & pickled red beets, soft herbs( tarragon, parsley)
Green Goddess
Mixed lettuces(arugula, watercress, etc) raw radish Dressing: anchovy, parsley, tarragon, chives, chervil, vinegar, white wine, mayo based
Pork Belly
Entree sized. “Bacon steak salad”
Frisée tossed in mustard vinaigrette (apple cider vinegar,rice bran oil, sunflower oil)
3 oz bacon( smoked pork belly) smoked &put on top
Soft boiled egg( 6 minute egg)-cold- put on top
Nicoise
Entree sized
Romaine lettuce in lemon vinaigrette ( shallots, herbs)
Albacore Tuna loin packed in salt & oil, poached in sunflower/rice oil & herbs(garlic, Rosemary, thyme, etc.)
Fingerling potatoes, green beans, nicoise olives, casto patrano olives, picked concasse(skin removed)cherry tomatoes, egg yolk( cured, hung in Chz cloth & shaved like Chz on top of salad.
