What is Nigiri?
Nigiri Sushi is rice topped with fresh fish.
What is Sashimi?
Sashimi is sliced fish served on it’s own.
What is Maki and Uramaki?
Maki is your typical bite-sized piece of sushi, typically wrapped in Nori.
Uramaki is when the nori is inside, and the roll has rice on the outside.
What is Temaki?
A cone of Nori, filled with rice, fish and veggies.
What is Hosomaki?
Similar to maki rolls, with the seaweed on the outside, but the rolls are typically smaller.
What is Chirashi?
A bowl of sushi rice, topped with a variety of sashimi, veggies.
What is Oshi?
Compressed or pressed sushi.
What is Inari?
Sushi wrapped in slightly sweet tofu skin.

A spice blend of Red Chilli pepper, orange peel, sesame, ginger, seaweed.

A richer may where they use rice vinegar and just the egg yolks to create it.
What are Bonito flakes?
Made from the bonito fish (similar to mackerel), adds umami flavour.
What is Omakase?
Chef’s choice from the sushi bar, from lightest to heaviest.

Scallions
Negi Hamachi

What is Salmon Kappa?
