What is Raicilla?

A

Distilled spirit from Jalisco. Traditional and distilled in primitive stills using Agave. Protected by a DO and had a reputation as Mexican moonshine. Less smoky than Mezcal and more acidic, fruity and floral than Tequila.

What is pechuga?

A

Mezcal that has a mixture of fruit, herbs, spices, nuts or grains infused with it and then a raw breast of meat (chicken, turkey, rabbit) suspends over the still to allow vapour to pass through it during distillation

What is Cristalino?

A

An aged tequila that is filtered to remove the colour and some of the woody notes imparted by oak aging. The result is a crystal clear Tequila that combines the complexity of an anejo with the brightness of a blanco.
