Untitled Deck Flashcards
(17 cards)
What is the first step in the beer brewing process?
Malting – Barley is soaked, sprouted, and kiln-dried to activate enzymes.
What happens during mashing?
Malt is mixed with hot water to convert starches into fermentable sugars, creating wort.
What is lautering?
Separation of sweet wort from spent grain.
What is the purpose of boiling the wort?
To sterilize it and extract bitterness and flavor from hops.
Why is the wort cooled before fermentation?
To bring it to a yeast-safe temperature for pitching.
What happens during fermentation?
Yeast converts sugars into alcohol, CO₂, and flavor compounds.
What is beer conditioning?
Aging beer to develop flavors, reduce off-flavors, and allow particles to settle.
How is beer usually carbonated?
Naturally (by residual yeast + sugar) or by forced CO₂.
What defines an Ale?
Warm fermentation with top-fermenting yeast (Saccharomyces cerevisiae); fruity and complex.
What defines a Lager?
Cold fermentation with bottom-fermenting yeast (Saccharomyces pastorianus); clean, crisp flavor.
What is an APA (American Pale Ale)?
Hoppy, citrusy beer with balanced bitterness and light malt; ~4.5–6% ABV.
What is an IPA (India Pale Ale)?
Stronger, hoppier ale with bold flavors and aromas; usually 5.5–7.5% ABV.
What is a DIPA (Double or Imperial IPA)?
An IPA with higher alcohol (8–10%+), more hops, and more malt.
What is a Pale Ale?
A balanced beer with moderate malt and hops; classic British or American styles.
What is a Stout?
A dark ale brewed with roasted malts; flavors of coffee, chocolate, and burnt toast.
What is a Kettle Sour IPA?
A sour + hoppy beer made by souring the wort with Lactobacillus before boiling and hopping it like an IPA.
What is mixed fermentation in brewing?
Using multiple microbes (yeast + bacteria like Brettanomyces and Lactobacillus) for complex, evolving sour or funky beers.
