Local baby potatoes are boiled, then smashed to order and made crispy in olive oil. Crispy potatoes are tossed with grilled eggplant slices and grilled halloumi. These are mixed with fresh garlic, pickled turmeric and shallots, cilantro, parsley, and Indian five spice (fenugreek, nigella, mustard, cumin, fennel). This mixture is placed atop baba ghanoush (coal-roasted eggplant, tahini, lime, roasted garlic, olive oil)
