Vinification-Nellites Flashcards
(18 cards)
What is the difference between Fining and Filtration?
Both are used to extract unwanted particles from wine, fining is when a substance is added to absorb it and filtration is when it is passed through and left behind
What is a Stelvin?
Screw Cap
What is a Vinolok?
A glass bottle topper
What is Autolysis?
A biological process that occurs when yeast cells break down and release their contents into wine during the aging process. The term “autolysis” literally means “self-destruction”.
What are the three types pf rose production?
-Maceration time
-Blending Method - often used for sparkling wine production.
-Saignée* (this essentially doesn’t exist anymore. It was a concentration technique for red wine production with rosé being the byproduct.)
How many Liters in a Barrique?
225 liters
How many Liters in a Puncheon?
300 liters
How many Liters in a Demi-Muid?
600 liters
How many Liters in a Foudre/Botti?
1,000+ liters
Name three woods other than Oak used in Barrels.
-Acacia
-Cherry
-Chestnut
Whole-cluster versus stem inclusion versus whole- berry fermentations?
Basically Whole-Cluster includes Whole-Berry and Stem Inclusion. The exceptions being in Stem inclusion stems are added to a must so as not to be pressed, and Whole-Berry is just as it sounds, no pressing occurs (except from weight) with no stems at all included
What is the act of combining many grapes from different sites into one bottling called?
Assemblage
What are the various methods used to produce rose wine in France?
The main methods include:
* Direct pressing
* Maceration
* Saignée (bleeding)
* Blending
Each method contributes distinct characteristics to the final product.
What is the direct pressing method in rose wine production?
The direct pressing method involves crushing red grapes and immediately pressing them to extract juice without prolonged skin contact.
This method typically results in lighter-colored rosés.
Explain the maceration method in rose wine production.
The maceration method involves allowing the grape skins to remain in contact with the juice for a short period, usually a few hours to a couple of days.
This process enhances the color and flavor of the wine.
What is the saignée method in rose wine production?
The saignée method, or bleeding method, involves removing some juice from red wine fermentation to concentrate the remaining wine, producing both rosé and red wine.
This technique can lead to more complex flavors in the rosé.
What is the blending method in rose wine production?
The blending method involves mixing red and white wines to achieve the desired color and flavor profile.
This method is less common in France due to regulations.
What are the various sizes of bottles (above standard 750ml) used in wine and their size?
