A

What are the steps to completing a HACCAP document?
A
- Analyse and identify what could go wrong
- Identify points where things could go wrong (Critical Control Points – CCP)
- Set critical limits at each CCP
- Carry out checks to make sure control measures are working
- Decide what control points to put in place in case something goes wrong
- Verification - show that the HACCAP document is working
- Update and review all documentation
