What are the steps to completing a HACCAP document?

A
  1. Analyse and identify what could go wrong
  2. Identify points where things could go wrong (Critical Control Points – CCP)
  3. Set critical limits at each CCP
  4. Carry out checks to make sure control measures are working
  5. Decide what control points to put in place in case something goes wrong
  6. Verification - show that the HACCAP document is working
  7. Update and review all documentation
