Describe the differences between white and brown flours
White flour has had all the bran and germ removed as co-products, leaving only starchy endosperm. Extraction rate is generally no more than 80%
Brown flour made by adding selected co-products to white flour. Quantity of bran added to any brown flour can vary and will have an effect on total flour extraction, but 85-90% is expected
Greater bran addition, higher extraction rate, but amount of bran added has an effect on load appearance
