In this question there were many appropriate methods given, e.g. the use of trend or fashion forecasters,
looking at social media (using algorhythms) to see what is trending and past trends. Discussions/surveys/interviews with focus groups about what features they would like and what they have been buying

Recording stakeholders subjective interpretations of products in terms of what they see, hear, smell, taste, or feel. May include interviews
