PURPOSE FOR A PUREE DIET

A

– The purpose of this diet is to provide foods that can be successfully and safely swallowed.
– This diet consists of foods that are easy to swallow because they are pureed smooth and lump-free, not firm or sticky.

NOTES FOR IMPLEMENTING A PUREE DIET

A

– Puree all food you eat pureed to make foods easier to swallow.
– Once pureed, foods will be one consistent texture.
– Pureed foods fall off spoon as an intact spoonful, and hold shape on a plate.
– Liquids must not separate from solid and foods.

– Ask your health care team to show you how to test the consistency of the foods you eat to confirm they are safe for you to chew and swallow.
– There are convenient ways to confirm the texture of your foods using a spoon.
– Avoid separate thin liquids.
– This includes liquids that separate from pureed solid foods.
– These liquids should be strained and discarded before eating.
– To keep pureed foods smooth and lump-free, add small amounts of gravy, sauce, vegetable juice or cooking water, fruit juice, milk, or half and half while pureeing. This will prevent lumps from forming.
– Large chunks, hard foods, or lumps found in pureed foods that need to be chewed should be avoided.
– Avoid very hard, sticky, or crunchy foods. See Foods Not Recommended list for examples.
– Prepare quantities of favourite food items and freeze them in portion sizes for use later.
– Reheat foods carefully so that a tough outer crust does not form on them.

GRAINS ALLOWED AND TO AVOID IN A PUREE DIET

A

ALLOWED:
Pureed soft cooked hot cereals with no lumps. Served without excess liquid.
Soft breads, rolls, pastries, pancakes, French toast, muffins, donuts and bread dressing that have been pureed.
Pregelled, soaked bread, cakes, cookies, and other grains that are consistently moist throughout without hard parts formed during sitting (per facility policy).
Pureed, moist pasta, potatoes and rice without lumps. Liquids/sauces does not separate from food.

TO AVOID:
Any item that is not pureed: or has lumps. Dry cereal, cooked cereal with lumps, cereal with seeds.
Grainy, sticky, or glutinous rice. Rice that separates into individual grains when cooked or served.

PROTEINS ALLOWED AND TO AVOID IN A PUREE DIET

A

ALLOWED
Pureed prepared, moistened, tender fresh or frozen red meat, including beef, pork, or lamb.
Pureed prepared, moistened fresh or frozen tender poultry, including skinless chicken or turkey.
Puree prepared, moistened fresh, frozen, or canned tender seafood, including fish (salmon, herring, and sardines), shrimp, lobster, clams, and scallops.
Pureed eggs and egg substitutes.
Puree, smooth casseroles with no liquid separating from the solid; moist with incorporated sauces/gravies.
Puree prepared, moistened soy foods, such as tofu or tempeh.
Puree prepared, moistened meat alternatives, such as veggie burgers, and sausages based on plant protein.
Puree prepared, moistened legumes, such as dried beans, lentils, or peas

TO AVOID
Protein foods not pureed into smooth, lump free items.
Chunky and smooth nut seed butters, unless used in a tolerated recipe.
Whole nuts and seeds, such as peanuts and almonds; pistachios and sunflower seeds.
Protein foods served with undrained thin liquids.

DAIRY ALLOWED AND TO AVOID IN A PUREE DIET

A

ALLOWED:
Smooth yogurt (without nuts or coconut), pureed yogurt and pureed cottage cheese.
Whipped cream cheese, sour cream, and whipped topping used in allowed recipes. Sour cream and whipped cream also allowed as condiment.
Frozen desserts such as pudding, custard, ice cream, sherbet, malts, and frozen yogurt if transitional foods allowed by your speech therapist.
Milk, fortified soymilk, fortified nut milk in the liquid consistency recommended by your speech therapist.

TO AVOID
Yogurt with lumps, seeds, fruit pieces, nuts or coconut.
Cheeses unless pureed into allowed recipe.
Frozen desserts such as pudding, custard, ice cream, sherbet, malts, and frozen yogurt if transitional foods not allowed by your speech therapist.

VEGETABLES ALLOWED AND TO AVOID IN A PUREE DIET

A

ALLOWED:
Pureed canned or cooked frozen, tender vegetables including dark-green, red and orange vegetables, legumes (beans and peas), and starchy vegetables.
Smooth tomato sauce without seeds.
Mashed potatoes and whipped sweet potatoes without skin; pureed potato recipes.
Vegetable juices in the liquid consistency recommended by your speech therapist.

TO AVOID:
All raw vegetables.
Stir-fried or fried vegetables that do not puree into smooth, lump free product.

FRUITS ALLOWED AND TO AVOID IN A PUREE DIET

A

ALLOWED:
Pureed canned and cooked fruits, drained of excess juices; puree fresh fruit if smooth and lump free with no separate of liquids.
100% fruit juice in the liquid consistency recommended by your speech therapist.

TO AVOID:
All non-pureed fresh, frozen or canned fruits; seeds and skins.
Stringy, high-pulp fruits such as papaya, pineapple, or mango that do not puree into smooth, lump free product.
Uncooked dried fruits such as raisins, prunes or apricots.
Fruit leather, fruit roll-ups, fruit snacks, dried fruits.

ALLOWED:
Extremely thick, smooth, non-pouring sauce or gravy.
Coffee, tea, water, 100% fruit juice in the liquid consistency recommended by your speech therapist.

TO AVOID:
Liquid consistencies other than the consistency recommended by your speech therapist.
