  • non-polar hydrophobic R groups towards the centre
  • polar hydrophilic R groups on the outside
    > this makes them soluble in water

  • eg. haemoglobin, immunoglobin, enzymes
  • they have an important physiological role as they can be easily transported around organisms and are involved in metabolic reactions

  • large number of hydrophobic R groups makes them insoluble
  • limited number of amino acids with the sequence being highly repetitive
