Delicate soy marinated sushi grade tuna, over fresh avocado and cucumber, paired w/ sweet mango puree and spicy srirach topped w/ soy pearls (soy sauce “caviar”: salty umami soy sauce is enveloped in a thin alginate shell, which bursts in the mouth, appealing to all five senses at once. This decadent garnish is an elegant step into the world of molecular gastronomy)
