Beta- conglycinin

  • glycoprotein with 3 subunits (alpha, beta, alpha-prime)
  • forms transparent, soft, elastic gels

Glycinin

  • a hexamer with numbered subunits (1a, 1b, 2, 3, 4, 5) that are linked via disulfide bonds
  • form hard gels
