A

~Milk is clotted by adding rennet,bacteria and heat
~Cheese forms whey and curds
~Whey is strained from the curds which are salted and presses
~The more curd is left to be pressed the harder the resulting cheese
~During ripening stage the flavour,smell and texture develops
~To make cheese more digestible do not overlook and serve it with starchy food such as bread
