boiled and pureed chickpeas with tehina and garlic. also a puree of grilled squash and olive oil. garnished with zaatar spices(nutty/toasty taste)
roasted cauliflower, spicy herb labneh, pomegranate and walnuts
cauliflowered is pickled and then grilled, labneh is strained/thickened yogurt made with serrano chillis(hot) cauliflower topped with pomegranate seeds and walnuts

octopus is poached until tender in court bouillon(soup made with white wine) served over crispy saffron rice(tasy spice-yellow rice seen in certain cuisines) dish is garnished with zhuong and roasted shishito peppers(mild, a little sweet and a little smokey)

spicy herb sauce made with serrano chillis
sauteed mussels, stewed tomatoes, confit garlic, lemon and herbs
mussels picked from shells, pan fried in olive oil. sauteed with stewed tomatoes, shallots, confit garlic cloves and a mix of herbs

shortribs are grilled and braised in chicken stock, tomato sauce onions red bell peppers, garlic and raisins. served over couscous(what kinda couscous?) and garnished with parsley and pomegranate seeds

plums are poached in simply syrup and and set atop sweetened labneh(strained greek yogurt) garnished with shortbread, pistachio and basil
