Dutch Reminder - Nitro vs. Cold Brew
The main difference between our Cold Brew and our Nitro Cold Brew is nitrous infusion in the Nitro Cold Brew. Cold Brew has more caffeine than an Americano but less than our Nitro Cold Brew. It’s also available in three sizes, making it perfect for Cold Brew lovers who want a drink with limitless possibilities!

Golden Eagle Syrup
Golden Eagle syrup is a specially formulated flavor that removes the need to manually combine caramel + vanilla to make our signature Golden Eagle®. When combined with another flavor, Golden Eagle syrup should be treated as two individual flavors. Example: A coconut Golden Eagle would receive equal parts caramel, vanilla, and coconut; ⅔ scoop of GE flavor and ⅓ of coconut.

HONEY RULE
The drink gets 1 flat scoop of honey, unless it's paired with a flavor, then it follows the drink flavor rule.

DRIZZLES, FLOATS, & PICTURE PERFECT
A float is 1 scoop of flavor on top of the drink. A float goes underneath Soft Top, whip,drizzle and sprinks. ● A drizzle is a flavor hashtag. Drizzle goes on top of Soft Top, whip and underneath sprinks. If extra drizzle is requested, add one additional hashtag of drizzle. Then, for every "extra", add one more. ● If drizzle around the cup is requested: Add drizzle around the cup in a back and forth motion. Refer to the picture as an example. If extra drizzle is requested, drizzle around the cup an additional time for every “extra”. To make a Picture Perfect drink: First, drizzle chocolate and caramel sauce one time each around the top of the cup in a gentle back and forth motion. Fill the cup with the desired beverage, add the whip cream, and finish with a hashtag of caramel and chocolate sauce on top

Dutch Reminders:
● Make sure to stir in your sauces so that they dissolve completely, verify by checking your scoop to ensure there isn't any remaining. If the sauce isn't well mixed in, the drink won't be consistent in flavor. ● Always put the sauce or syrup in the cup with the espresso before adding the milk so that the flavor blends consistently throughout the drink.

Sf Syrups vs Sf Sauces
Sugar-free syrup is more potent than the sugar-free sauces. When a hot or iced drink is ordered with sugar-free syrup, it receives one flat scoop. Sugar-free sauces are less potent than sugar-free syrups. When a hot or iced drink is ordered with sugar-free sauce, it receives two flat scoops.

Dutch Reminder:
Fruit flavors have more acidity, which can cause curdling in hot milk. A best practice is to always follow the proper order of operations when building a drink: flavor, shots, milk. When adding a fruit flavor to a hot cocoa or steamer, add the flavor to the cold milk in the steam pitcher prior to steaming. ● If you are mixing multiple flavors, split all flavors evenly. This also applies if a drink has two sugar-free sauces and one sugar-free syrup. ● If a Customer Orders a Zero Sugar Added Mocha, the default milk base is breve.

Adjusting the Grind
To adjust your grind to be finer turn the adjustment collar to the right. ---Tip! If you want your shots to be longer (more fine) make your arm longer by moving the collar away from you! To adjust your grind to be more coarse turn the adjustment collar to the left. TIP! Shorter shots (more coarse) means you make your arm shorter by pulling the collar towards you! When adjusting the grinder, an adjustment of one notch will change the shot time by 2 to 3 seconds.

What are the 3 parts of a dub shot?
`● Crema – The top, thin, frothy layer of the espresso shot. This is sweet, with a light, golden brown color that changes to whitish as the good oils in the coffee are extracted. ● Body – The middle of the shot. It should be a caramel brown color. ● Heart – The bottom of the shot. It should be a deep, rich brown color with a bitterness that balances the sweetness of the crema and body.

Safety rules for using alternative milks
● Use a clean steam pitcher that is designated for the sole use of Coconut, Almond or Oat Milk. ● Make sure your steam wand is thoroughly wiped down and purged before and after each use. ● Shake the carton well before using; natural separation can occur. ● Refrigerate the milk after opening. ● Use well-chilled milk for drinks to achieve a better texture on steamed drinks and a better temperature throughout iced drinks.

When a customer orders a drink "Skinny"
● If a customer orders a dairy based drink "skinny," you will change the milk to nonfat. ● If a customer orders a zero sugar added drink that is traditionally made with our chocolate milk, the default milk is Kick Me Mix, unless an alternative milk choice is specified. For example, a zero sugar added mocha would be made with Kick Me Mix. ● If a customer orders a drink as zero sugar added that is already made with white milk, then the milk stays the same as what the recipe originally calls for, unless the customer specifies otherwise. For example, a zero sugar added vanilla latte is made with 2% milk. ● If a customer orders a skinny zero sugar added drink, then the default milk is nonfat. For example, a skinny zero sugar added mocha is made with nonfat milk.

Sweet Cream Rules
When Sweet Cream is ordered it will replace one scoop of the drink base. Sweet Cream is added to the drink mix when flavor is added. Then pour your base to the appropriate mixline. Recipe example: Flavor, one scoop of Sweet Cream, espresso (if applicable), pour the drink base to the appropriate mix line.

When storing milk....
● Never leave the milk out on the counter. ● Stock the milk in the fridge immediately after it’s delivered. ● Check expiration dates and rotate properly. Date the containers with the opening date and toss after 7 days. ● Make sure your fridge temperature is between 32º and 40º. Anything above that range will spoil quickly and anything below will ice up. ● Never use milk if it is expired, or if it smells ”suspicious” or looks strange to you, it’s better to be safe rather than sorry!

● Nonfat, 2%, and Kick Me Mix have no added sugars, but do contain naturally occurring sugars. ● Nonfat milk has the fewest amount of calories, but has just as much naturally occurring sugar as 2% and whole milk. ● Kick Me Mix has the highest fat content, but the lowest naturally occurring sugar content.

When making kids drinks always remember...
*For blended drinks made from a Freeze Machine, fill to the 10 oz line including 1 scoop of flavor with the base. *When adding Soft Top, cream, drizzle, or float to a kids drink, add the standard amount. *Kids milk does not receive ice unless requested and is served like a cold pour with the base filled to the 10 oz line. *Always measure out kids drinks in a mix cup.

How do you make a toasted cold brew?
1 scoop flavor, can be s,m,or lg When cream or chocolate milk is added to a Cold Brew, we add 2 ounces and steam the Cold Brew and milk together in the tin to 150-155 º F. For accuracy and to avoid wasting product the best practice is to always measure the Cold Brew and milk in a mix cup prior to steaming. It is important to know that Cold Brew expands, so reducing the amount of Cold Brew by 1 oz. allows for expansion. TOASTED NITRO COLD BREW is served in a large paper cup. The nitrogen in our Cold Brew creates a varying amount of expansion when the product is steamed. Using a large cup allows for room for customers to request flavor and cream in their Toasted Cold Brew.

What are the drink procedures for Poppin Boba?
Add one flat 2 oz scoop of boba to the top of the drink. For extra boba, add one additional scoop for each "extra". ○ By default, boba goes underneath soft top and whipped cream unless otherwise requested. In order to allow the boba through the straw, serve all boba drinks with a boba straw. If a kids drink is ordered with boba, serve it in a small ice cup with a boba straw since kids straws are not wide enough to allow the boba through. Storing Standards: Boba can be stored at room temperature until opened. Once opened, date and refrigerate for up to 5 days.

When mixing drinks, always remember....
Tom-tomming is pouring the drink back and forth between a mix cup and an ice cup. This is done for all non-carbonated drinks to ensure the drink is well-mixed and chilled throughout. When making carbonated drinks, or adding sauce to the drink, be sure to stir with a spoon. This will ensure the drink is well mixed and chilled throughout.

What is a Cold Pour?
A cold pour drink is a customized drink made with flavor, shots of espresso and cold milk. A cold pour has no steamed milk or ice. A cold pour can be made in a hot cup or plastic cup per the customer’s request. Plastic cup cold pours- Made in a mix cup then poured into the cup and topped off with milk straight from the refrigerator. Hot cup cold pours - Follow the same recipe as hot drinks, you just don't steam the milk. Top with cold milk straight from the refrigerator.
