Blue Hawaiian
A mix between a classic blue Hawaiian and a chartreuse swizzle, with pineapple juice, coconut syrup, fresh lime juice, chartreuse, vodka, and naturally coloured with blue spirlina
Technique: shake
In cheater tin:
.5 oz lime juice
.5 yellow chartreuse
.75 oz blue coconut syrup
1 oz Smirnoff vodka
1.5 oz pineapple juice
4x dashes of pineapple anise bitters
Pack cheater tin with ice and shake 12 times to chill ingredients
Strain with Hawthorne strainer and give a crushed ice peak
Garnish with orchid flower
Old Fashioned
A cocktail by definition: spirits, sugar, water, and bitters.
In a mixing glass:
.25 oz demerara syrup
2 oz buffalo trace bourbon
4x root beer bitters
Then pack mixing glass full of ice
Insert bar spoon and stir in circles for 20 seconds
Use a julep strainer and strain over kind cube into double rocks glass
Garnish: skewered cherry and orange zest
To express the oils from the orange zest, take the freshly peeled zest and point the skin side directly on top of the cocktail squeeze does zest upwards to express orange oils
Espresso Martini
A classic riff on espresso martini with rich demerara sugar, vanilla liqueur, Kahlúa, Ketel One vodka, and house made cold brew coffee
.25 oz demerara syrup
.5 oz licor 43
.5 oz kahlua
1 oz Smirnoff vodka
2 oz cold brew coffee
2x fernet branca
Pack nick and Nora glass to chill glass
In cheater tin, add ingredients and pack full of ice
Shake 12 times and strain with hawthorne strainer into the chilled nick and Nora glass
Garnish: star anise
Ketel One Botanical (cucumber and mint)
A sugar-free, under 100 cal vodka highball mixed with natural cucumber and mint
Technique: build
1 oz ketel one botanical cucumber and mint vodka
4 fl oz soda water
Pack rocks glass full of ice
Add ingredients
Insert bar spoon and mix
Garnish: cucumber wheel and mint spring
Ketel One Botanical (peach and orange blossom)
A sugar-free, under 100 cal highball mix with natural peach and orange blossom
1 oz ketel one botanical peach and orange blossom vodka
4 oz soda water
Pack a rocks glass with ice
Add ingredients
Mix with bar spoon
Garnish: orange half wheel
Coconut Mint Margarita
A tropical margarita with fresh mint, coconut milk, and lime
Technique: shake
10-12 mint leaves
.5 oz triple sec
.5 oz water
.75 coconut syrup
1 oz lime juice
1 oz el tequileno reposdao
Put ingredients into cheater tin and pack with ice
Shake 12 times to mix ingredients
Strain with Hawthorne strainer over fresh ice in a double rocks glass
Garnish: mint spring
For a double, remove water and add 1 oz el tequileno reposado
Don Julio Margarita
A margarita served traditionally with Don Julio Blanco
Technique: shake
.5 oz water
.5 oz countreau
.75 oz simple syrup
1 oz lime juice
1 oz don julio blanco
Rim a rocks glass with 1/2 rum salt and fill with ice
Add ingredients to cheater tin with ice and shake 13 times
Strain with Hawthorne strainer into rocks glass
Garnish: lime zest
For a double: remove water and add don Julio blanco
Don Julio Margarita (flavoured)
A margarita served traditionally with Don Julio Blanco
We have strawberry, mango, raspberry, passion fruit)
Technique: shake
.5 oz water
.5 oz cointreau
.75 fruit cordial (strawberry, mango, raspberry, passion fruit)
1 oz lime juice
1 oz don julio blanco
Rim glass with 1/2 sale and fill rocks glass with ice
Add ingredients into a cheater tin
Pack tin with ice and shake 12 times
Strain with Hawthorne strainer
Garnish: like zest
For double: remove water and add 1 oz don julio
Lime Frozen Margarita
A frozen margarita mix with housemaid syrup and fresh squeezed lime juice
Technique: build
Rim a margarita glass with 1/2 margarita salt
Fill the marg glass with 12 oz marg mix forming a peak above the rim of the glass
For a double: add 1 oz el jimador blanco
Guava Frozen Margarita
Technique: build
11 oz Margarita mix
1.5 oz guava purée
Squeeze 4x even circles of guava purée on the inside of the marg glass
Then fill the marg glass with 11 oz frozen marg mix
For a double: add 1 oz el jimador blanco
Frozen Margarita (flavoured)
A frozen margarita mix with housemaid syrup and fresh squeezed lime juice
Technique: build
12 oz marg mix
.5 oz fruit cordial (strawberry, mango, raspberry, passion fruit)
For a double: add 1 oz el jimador blanco
Patron Cadillac Margarita
A smooth and premium margarita mix with Patron reposado, grand marnier, seville orange and fresh lime juice shaken with egg whites
.5 seville orange syrup
.5 grand marnier
.75 egg whites
1 oz like juice
1.5 patron reposado
Rim glass with 1/2 salt
In cheater tin, add ingredients without ice and shake 20 times to make foam
Pack with ice and shake 12 more times to chill ingredients
Strain with Hawthorne strainer into the marg glass
Top cocktail with ice until the foam level is with the rim
Garnish: lime wheel
Pineapple Margarita
A margarita with pineapple syrup, smoky Mezcal, fortified white wine, and fresh lime juice served with chilli lime salt and a dehydrated pineapple fan
.5 oz water
.5 oz lillet blanc
.75 oz lime juice
1 oz pineapple syrup
1 oz los siete misterios doba yej
Rim rocks glass with 1/2 chili lime salt
Measure ingredients into cheater tin and pack with ice
Shake 12 times
Strain with hawthorne onto fresh ice

Lime Rocks Margarita
A margarita served traditionally
.5 oz water
.5 oz triple sec
.75 oz simple syrup
1 oz lime juice
1 oz el jimador blanco
Run a rocks glass with 1/2 rim marg salt and fill with ice
Put ingredients into cheater tin and pack with ice
Shake 12 times and strain with hawthorne strainer into rocks glass
Garnish: lime zest
Double: remove water and add 1 oz el jimador
Flavoured Rocks Margarita
A perfect combination of fruit and refreshing margarita
Lime rasberry strawberry mango passion fruit
.5 oz water
.5 oz triple sec
.75 oz fruit cordial
1 oz lime juice
1 oz el jimador blanco
Rim with 1/2 marg salt and fill with ice
Add ingredients to cheater tin and shake 12 times
Strain with hawthorne strainer

Afresh margarita made with house pressed lime juice, tequila, sugar and habanero

.5 oz triple sec
.75 oz simple syrup
1 oz lime juice
1 oz el jimador blanco
2x scrappys bitters firewater tincture
Rim rocks glass with 1/2 rum of chili lime salt and fill with ice
Measure ingredients into cheater tin and fill with ice
Shake 12 times
Strain with hawthorne strainer
Garnish with lime zest
Extra spicy: add 2x firewater tincture
Double: remove water and add shot
Spicy Rocks Margarita (flavoured)

A spicy watermelon margarita with fresh habanero and mint lime juice and sweet strawberry
4 mint leaves
.25 oz licor 43
.5 oz aperol
.75 oz watermelon syrup

2x firewater tincture
4x strawberry bitters
Rim rocks glass with 1/2 rim of marg salt
Ad ingredients to cheater tin and fill with ice
Shake 12 times and strain with hawthorne
Garnish: mint spring
Extra spicy: 2x firewater tincture
Marilyn Monroe
A passion fruit, vanilla and lime Prosecco topped martini. Delicious, sweet and light!
Technique: shake and stir
Glassware: coupe glass
Part A:
.5 oz lime juice
.75 oz passion fruit cordial
1 oz Smirnoff vanilla vodka
Part 2:
1.5 oz sparkling wine Prosecco
2 oz soda water
In a cheater tin, add Part A and fill with ice
Pack coupe glass with ice and soda water to chill glass
Shake 12 times
Add soda water into tin over shaken drink
Insert bar spoon and stir
Empty chilling ingredients from coupe glass
Strain with hawthorne strainer into chilled coupe glass
Top with Prosecco
Garnish: lime wheel
Martini
A traditional chilled martini served with a choice of kettle one vodka or Tanqueray gin. Customize your martini with a lemon twist or three olives.
Technique: stir
Glassware: coupe glass
.5 oz dry vermouth
2.5 oz Tanqueray gin or ketel one vodka
In a mixing glass, add the vodka or gin
Pack mixing glass full of ice
Pack coupe glass with ice and soda water to chill
Insert bar spoon and stir in circles for 20 seconds
Empty chilling ingredients
Top with julep strainer and strain into a chilled coupe glass
Garnish: lemon zest or olives
Other variations:
Very dry: no vermouth
Dry: 1 tsp vermouth
Wet: 2 oz gin or vodka and 1 oz dry vermouth
Dirty: addition of .5 oz olive juice
Burnt: glass rinse of Johnnie walker whiskey
Execution: shake martini upon request 
Maui Mai Tai
A tropical riff on the mai tai; Shaken with passion fruit, macadamia, fresh lime juice, triple sec, and a blend of Jamaican Rums

.75 macadamia orgeat
.75 lime juice
.75 Kingston 62 white rum
.75 Appleton signature blend
2 oz passion foam
3x angostura bitters
Measure ingredients into cheater tin and pack with ice
Shake 12 times
Strain with hawthorne strainer into rocks glass

Mojito
A light and refreshing classic cocktail showcasing organic cane sugar, fresh lime juice, aged white rum, muddled with mint leaves and topped with soda
Collins goass
10-12 mint leaves
.75 oz simple syrup
.75 oz lime juice
1 oz Kingston 62 white rum
1.5 oz soda water
Add mint leaves, simple syrup, lime juice and rum into cheater tin
Muddle gently to bruise leaves
Transfer into Collins glass
Pack with crushed ice
Top with soda water
Stir with bar spoon
Garnish: mint spring
Raspberry Mojito
A light and refreshing cocktail showcasing organic cane sugar fresh lime juice aged white rum muddled with mint leaves and topped with Soda
10-12 mint leaves
.75 oz simple syrup
.75 oz lime juice
1 oz Kingston 62 white rum
1.5 oz soda water
1 oz raspberries
Measure raspberries, mint, simple syrup, lime juice, and rum into cheater tin
Muddle to bruise mint leaves
Transfer into Collins glass
Fill 3/4 with ice
Add 1.5 oz soda water to fill glass 1 inch below rim
Stir aggressively
Top with crushed ice
Garnish; mint spring
Cucumber Mojito
A light and refreshing classic cocktail showcasing organic cane sugar, fresh lime juice, aged white rum, muddled with mint leaves and topped with Soda
.5 oz cucumber pieces (10-12 pieces)
10-12 mint leaves
.75 oz lime juice
.75 oz simple syrup
1 oz Kingston 62 white rum
1.5 oz soda water
Add everything but soda water to a cheater tin and middle gently to bruise mint leaves
Transfer to a Collins glass
Fill 3/4 full of crushed ice and add 1.5 oz soda water filling the glass 1 inch below rim
Stir aggressively
Top with crushed ice peak
Garnish: mint spring
Moscow Mule
Refreshing vodka Collins with a strong ginger bite
Technique: build
Glassware: copper mule mug
.5 oz lime juice
1 oz ginger syrup
1 oz smirnoff vodka
2 oz soda water
Pack copper mug full of ice
Measure ingredients into mug and stir thoroughly
Top with ice to level the rim of the mug
Garnish: mint spring
Passion Mule
A take on the classic mule, mixed with passionfruit, ginger, tiki spices, citrus vodka and fresh lime juice
Technique: build
Glassware: copper mule mug
.5 oz passion fruit cordial
.5 oz ginger syrup
.5 oz lime juice
1 oz smirnoff vodka
2 oz soda water
1x angostura bitters
Pack copper mug full of ice
Add ingredients and mix thoroughly
Top with ice to level with rim of mug
Garnish: dehydrated pineapple half wheel and mint spring
PB&J
A delicious whiskey sour with a homemade raspberry jelly mix, fresh lemon juice, and peanut butter whiskey shaken on egg whites
Technique: dry shake
Glassware: rocks
.5 oz lemon juice
.75 oz egg whites
.75 raspberry jelly mix
1.5 oz screwball peanut butter whiskey
In double rocks glass measure .75 oz raspberry jelly without ice
In cheater tin, add ingredients (WITHOUT ICE) and shake 20 times to maximize foam
Pack cheater tin and double rocks glass with ice
Shake 12 times to chill ingredients
Layer the shaken ingredients by slowly straining with hawthorne strainer over fresh ice
Red Sangria
A fruity chilled wine served in a wine glass
5 oz of pre mixed sangria with alcohol
Pack wine glass full of ice
Shake portioned sangria to ensure settled ingredients are mixed
Fill glass with sangria
Garnish: 5 pieces of sangria fruit
Insert bar spoon to submerge into sangria base
Watermelon Rose Sangria
A fresh watermelon rosé base sangria mix with aperol pomegranate fresh lemon juice and strawberry bitters
5oz pre mixed sangria with alcohol
Pack wine glass full of ice
Shake portioned sangria to ensure settled ingredients are mixed
Fill glass with sangria 
White Sangria
A white bass sangria mix with Brandy, peach, apples, fresh lemon juice and citrus
5 oz pre mixed sangria with alcohol
Pack wine glass with ice
Shake portioned sangria to ensure settled ingredients are mixed
Garnish with 5 pieces of sangria fruit
Insert bar spoon to submerge fruit in sangria base
Signature Caesar
A kick ass Caesar that is bold and delicious
Technique: build
Glassware: paneled mug
.75 is Caesar spice mix
1 oz smirnoff vodka
3 oz motts Clamato
Rim mug with Caesar rim
Pack glass with ice
Add ingredients over ice
Stir to mix ingredients and top with ice 1/2 inch below rim
Garnish: lime wedge, pickle and jerky
Spice level:
Light spice: .25 oz Caesar spice mix
Spicy: .75 Caesar mix and 2 dashes Tabasco
Spiked Yuzu Lemonade
A Uzu Collins mixed with fresh lemon juice citrus vodka fortified white wine and orange tree essence topped with soda water
Technique: muddle
10-12 mint leaves
.5 oz yuzu syrup
.5 oz lemon juice
.5 oz lillet blanc
1 oz absolute citron vodka
2 oz soda water
2x ms betters orange tree bitters
I’m cheater tin, add all ingredients but soda water and muddle gently to bruise mint leaves
Transfer to Collins glass
Pack with ice
Top with 2 oz soda water
Insert bar spoon and mix
Garnish: mint spring
Double: add 1 oz citron vodka and .5 oz lillet blanc
Aperol Spritz
Refreshing summer drink with Italian aperitif served in a wine glass
Technique: build
1.5 oz aperol
2 oz villa marchesi Prosecco
2 oz soda water
Pack wine glass full of ice aligning with rim
Add ingredients
And insert bar spoon to mix
Garnish: half orange wheel along side of glass
Limoncello Spritz
A Brighton bubbly elderflower spritz featuring Limoncello, bitter aperitif, lemon juice and sparking wine

An early 90s throwback!
Lain Griffiths puts a modern twist on the classic cosmopolitan featuring bright lime, yuzu, hibiscus and cranberry.
Technique: shake
.5 oz yuzu syrup
.5 oz lime juice
.5 oz pink citrus
.5 oz triple sec
1 oz white cranberry juice
1.5 oz absolut citron vodka
In a cheater tin, add ingredients and pack with ice
Pack coupe glass with ice and soda water to chill glass
Shake 12 times
Empty chilling ingredients from coupe glass and strain with hawthorne strainer
Garnish: orange zest
Watermelon Mimosa
Are fresh watermelon/talk with Prosecco and garnished with a fresh mint spring
Technique: build
Glassware: flute
3 oz watermelon slush
5 oz villa marchesi Prosecco
In flute, pour 3 oz watermelon slush
Fill flute with 3/4 Prosecco
Insert bar spoon and gently stir to mix ingredients
Top with Prosecco leaving 1/2 inch spack between rim
