Keeping food safe help avoid
Food spoilage
Food contamination
Food poisoning
Define the term food spoilage
Unwanted change in edible quality of the food
How can you notice if a food is spoiled
There may be changed in smell, color, size, texture and taste of the food
Food spoilage is caused by two main factors namely them
Natural decay
Microorganism
Natural decay is caused by what
It is caused by enzymes present in foods
What are enzymes
They are special proteins that speed up chemical reaction in foods
What are microorganisms
They are tiny living cells that cannot be seen with human eye
Where are they found
They are found in air, soil, water, sewage and also on our skin
What are the main responsibility for food spoilage
Bacteria
Moulds
Yeasts
Name three different kinds of food that need to be stored in different ways
1) dry foods ( sugar, rice, tea ) should be stored in air tight containers on open shelves
2) fresh meat, fish and poultry should be stored in refrigerator or in freezer compartment
3) fruits and vegetables should be stored in the vegetable drawer of the refrigerator
Good contamination refers to the presence of what
1) harmful microorganisms
2) harmful chemicals
3) foreign objects
Give three reasons how microorganisms can occur
1) when fly settle on food ( they can leave behind dirt and microorganisms )
2) during handling of food ( people are not careful about food and kitchen hygiene as well as their personal hygiene
3) when household pets roam around different parts of the house and especially the kitchen
Give a reason how harmful chemical can contaminate food
Cleaning detergent, nail polish, insect repellent, insecticides and herbicides
Give a reason how foreign objects can contaminate food
Dirt, small pebbles, metal, hair and bones
Microorganisms does not only cause food spoilage but what does it also cause
Food poisoning
How can food poisoning occur
When you eat or drink water that has been contaminated with chemical substances and microorganisms ( pathogenic bacteria )
Name six causes of food poisoning
1) eating high risk food ( fish dairy products and leftover )
2) insufficient cooking or reheating of food
3) improper storage of leftover
4) poor Personal hygiene
5) using clean water to prepare foods and drink
6) using dirty utensils
What are the symptoms of food poisoning
1) diarrhea
2) nausea
3) vomitting
4) heavy sweating
5) fever
6) abdominal pain
