Describe semi-maceration carbonique

A

Seal whole bunch in pressurized steel vats.
The grapes will naturally start the fermentation, as the release of CO2 will form a cap and press for color and tannins.
Like this they’ll ferment internally.
Faster and lighter than normal fermentation.
