Eryngii mushroom
King trumpet / King oyster mushroom, has a thick, meaty white stem and a small tan cap.
What really stands out is the texture; meaty and juicy, with just the right amount of resistance to the bite.
Shitake mushroom
Most popular variety of mushroom, grown on wooden logs, available fresh or dried.
Dried shiitake have sweeter, strong woodsy flavor while fresh shiitake has a delicate and slippery texture when cooked.
Dried shitake is often soaked and then used as fresh but it has a stronger flavour.
Enoki mushroom
Also known by the name golden needle mushroom.
The delicate, white, long and slender enoki mushroom grows in a bunch.
While they have little flavor of their own, they absorb whatever flavor they are cooked in.
Maitake mushroom
The name comes from the word “dancing,” which aptly describes the look of this delicate and frilly mushroom.
They grow on oak and beech trees.
Shimeji mushroom
Little button-like- shimeji mushrooms are increasingly found at the base of the trees.
Shimeji grows in bunches of tight clusters.
They have little flavor or aroma of their own, but have a substantially rich and meaty texture.
