It tests for how much hemoglobin is in blood

Iron appears in smaller amounts in LOTS of foods - as intake increases so does iron

Enhances insulin sensitivity

Is used in the synthesis of many thyroid hormones
If deficient, can cause cretinism/mental retardation

What is the function of potassium and what are symptoms of deficiency/toxicity?
Main intracellular cation
Deficiency: hypertension and potentially arrhythmias
Toxicity: also cardiac arrhythmias
