How do you evaluate appearance?
1) clarity
2) intensity
3) colour
Where do primary aromas come from?
From the grapes or during fermentation
What are secondary aromas?
Created post-fermentation.
Most often extracted from oak or malpractice conversion
What are tertiary aromas?
From the aging process. Could be oxidative. The aging process can change the primary aromas. Fruit aromas become less fresh and more dried fruit character.
What is the 3 point scale to judge alcohol in wine?
Low: less than 11%
Medium: 11-13.9%
High: 14% or higher
What are the alcohol categories for fortified wines?
Low: 15-16.4%
Medium: 11-13.9%
High: 14% and above
How do you judge the quality level of a wine?
Balance, length/finish, intensity and complexity
