Warmth, sunlight, C02, water and nutrients

Skins (high level of flavors, colour and tannins)

What is the process of grape formation and ripening?
Flowering (self polinating)-fruit set-veraison (start of ripening, white grapes become gold and black grapes become red then purple)- ripening
What happens during ripening?
Grapes go from high acidity and low sugar to lower acidity and high sugar
Herbiceous characteristics decrease and signature flavors develop
What happens as black grapes ripen?
Tannins become riper
What is Botrytis/noble rot?
Fungus which grows on ripe grapes and causes holes in the skin (water evaporation)
What are the right conditions for noble rot to be beneficial?
- Grow on ripe grapes
- Damp misty mornings and warm dry afternoons
These grapes are usually used to make sweet wines
How do you classify temperature?
Cool- average temp of growing season 16.5 C or below
Moderate- 16.5-18.5
Warm- 18.5- 21.5
Where are most vineyards located (latitude)
30 degrees and 50 degrees north or south of the equator

A legally defined vineyard area
