What is Tokaji Szamorodni?

A

-Made from grapes harvested as Szamorodni and may be dry (Szaraz) or sweet (edes) depending on the amount of noble rot that is present
-Must be aged in cask for min 6 months
-Only be released from the winery from the January in the 2nd year after harvest
-Casks for dry wines not completely filled to enable flor like yeast–Develops character similar to Fino Sherry
-Yeast no role in sweet styles–Filling casks all the way

What is Tokaji Aszu?

A

-Base wine made from healthy grapes
-Before, during, or after fermentation, aszu berries are macerated in the base wine (12-60 hours)
-Uncrushed aszu berries
-Mixture pressed, then wine is matured for a period of time in oak
-Amount of Aszu berries used determines sweetness of final wine

What is Tokaji Eszencia (Essence or Nectar)?

A

-Eszencia is made using just the free run juice from Aszu berries (must so sweet can take years to ferment)
-Usually less than 5%abv
-Legal min level of RS is 450g/l, balanced by high acid

Wines labelled as late harvest?

A

-Made from grapes that have spent extended time on the vine
-Some use botrytis infected fruit (where noble rot is present, these wines are produced by fermenting the botrytized grapes (like Sauternes and TBA) rather then by the macerating process used for Tokaji Aszu
