A

-release of energy from carbohydrates- thiamin acts as a co enzyme and this aids enzyme activity
-upkeep of nerves by supporting the growth of the myelin sheaths that surround them
-ensure proper muscle tone in the heart- keep heart healthy

Deficiency?

A

symptoms related to nerve dysfunction since the myelin sheaths wrapping nerves cannot be made without adequate thiamin- symptoms include pins and needles or numbness

-restarted growth
-fatigue, depression
-beri beri- nervous disease associated with loss of appetite, leads to reduced food intake and in time enlargement of the heart

Effects of cooking and storage

A

-soluble in water- 20% lost when potatoes are boiled
-decomposes at high temps, esp alkaline conditions, meat loses 40% when roasted
-long term refrigeration- result in substantial loss- green beans lose up to 90% of their original content after one years refrigeration
-lost in killing of rice- removal of grain- white rice
