What are the wine steps of service?

A
  1. Retrieve the order from the guest, clarify the bin by repeating it back
  2. Discuss with sommelier in section if applicable
  3. Dress the table with the appropriate glassware and mise-en-place
  4. Order the wine through micros
  5. Retrieve bottle from sommelier station
  6. Present on the right of the host (when possible)
  7. Read off the name of the winery, it’s appellation, any cuvee name, vintage
  8. Open the wine on the table (when appropriate) or in the air based off your wine lectures from training
  9. Present the host with a taste
  10. Pour off the wine evenly around the table in a clockwise direction, making sure to leave at least one glass in the battle, please pour for any guests of honor first and then continue around the table clockwise, ending with the host.
  11. Return the bottle to the table or ice bucket
  12. Thank the guest
  13. Discuss future possibilities with sommelier
