What are the three basic steps to make Aszu?

A
  1. A base wine is made with ‘healthy’ grapes.
  2. Before, during or after fermentation the Aszu berries are macerated in the base wine between 12-60 hours.
  3. The mixture is then pressed and then matured for a period of time in oak.
