Define hyper-oxidation

A

A technique of deliberately exposing the must to large quantities of oxygen before fermentation.

What does hyper oxidation do to the must, and why is it performed on some wines?

A
  • it will oxidize compounds that oxidize easily, which turn brown as they do so
  • stabilizes the wine against oxidation, after fermentation
  • removes bitter compounds that come from unripe skins, stems, and seeds

Why would hyperoxidation not be used?

A

Hyper oxidation can destroy some volatile aroma compunds, and so is not suitable for aromatic varieties
