What is a lipid?
An organic compound that is insoluble in water. A non-polar molecule.
What is a fat?
A lipid is animal origin. Solid at room temperature.
What is an oil?
A lipid of plant origin. Liquid at room temperature.
What is in a lipid?
1 glycerol molecule and 3 fatty acid molecules.
What are two other names for lipids?
Triglyceride
Neutral fat
What is an emulsifier?
Can cause fats to mix with water by using molecules with a polar and non-polar end. They position themselves in an oil droplet so that their non-polar ends project inward and their polar end projects outward.
What is a fatty acid?
A hydrocarbon chain that ends with -COOH.
What is a saturated fatty acid?
A fatty acid that has no double bonds between carbon atoms.
What is an unsaturated fatty acid?
A fatty acid that has at least one double bond between carbon atoms.
What is a phospholipid?
A lipid that contains a phosphate group. Part of the cellular membrane.
What is a phospholipid composed of?
A polar head that contains a phosphate group and glycerol and two non polar tails that are each a fatty acid.
