What is a protein?
Polymers composed of amino acid monomers.
What is an amino acid?
A central carbon atom bonded to a hydrogen atom and 3 functional groups.
Name 3 functions of proteins.
Enzymes
Antibodies
Structural (hair, skin, nails, ligaments, tendons)
What is the purpose of an enzyme?
To speed up chemical reactions.
What is a polypeptide?
A single chain of amino acids bonded by a peptide bond. Shares electrons and makes slightly positive and slightly negative charges.
What is the primary structure of a protein?
Determined by the sequence of amino acids. A chain.
What is the secondary structure of a protein?
When hydrogen bonds between amino acids causes an alpha helix shape or a beta pleated sheet.
What is the tertiary structure of a protein?
A globular shape. Hydrophilic on the outside and hydrophobic on the inside.
What is the quaternary structure of a protein?
When 2 or more polypeptides join to form a single protein.
What is denaturation.
When proteins are exposed to extreme heat and pH making an irreversible change in shape.
