- You can remove a random plate here and there to make space

A

If a table is not ready to be cleared and you know they’re main courses are fired, inform the table’s server. The server will manage that reset.

If you’re not sure a table is ready to be bussed, they’re probably not ready and you should give them more time.

Clearing Pt. 3

A

Do not scrape plates at tables.

Stack neatly and interlock silver when possible.

Start with a base plate to stack onto when clearing - this is the largest, cleanest plate on a table.

You can bring a tray to a table for bussing if it has only small plates that won’t stack well.

Wiping

A

WIPE tables with a clean wiping cloth or C-Fold. Crumb into a share plate off the edge of the table, not into your hand or onto the floor.

Resetting Pt. 1

A

Communicate with the server about the setup for the next course. You can also check the kitchen ticket to see how the next course must be set.

Silver must always be reset from a marking tray and not from a bare hand.

A

Support staff does not need to bus glassware and beverages on active tables. It is the servers responsibility to do so.

Resetting New Tables Pt. 1

A

Once a table has left, wipe down the table another time and check the cleanliness of the floor, table edges, seats, etc. before resetting the table.

Lounges must be wiped out for each resetting. There may not be pizza crumbs on seats for the next reset.

All furnishings should be returned to their proper spot prior to a table being reset.
