What are anise-based spirits?
Spirits flavored predominantly with aniseed (or star anise), known for their liquorice-like aroma. They often cloud (louche) when water is added.
ABSINTHE
Origin: Switzerland & France
Base: High-proof neutral alcohol
Flavorings: Anise, fennel, wormwood
Color: Often green (“La Fée Verte”), but can be clear
Alcohol: Very high (45–75% ABV)
Tradition: Served with sugar cube & water drip
PERNOD / PASTIS
Country: France
Base: Star anise, licorice root
Alcohol: ~40–45% ABV
Color: Clear to yellow
Pernod = modern absinthe-style without wormwood
Pastis = typically sweeter and more herbal
OUZO
Country: Greece
Base: Grape pomace or neutral spirit
Flavorings: Anise, fennel, coriander, cloves
Alcohol: ~40–50% ABV
Tradition: Drunk with water and meze
RAKI
Country: Turkey
Base: Grapes or raisins
Flavorings: Aniseed
Nickname: “Lion’s milk” (milky appearance when mixed with water)
Alcohol: ~40–50% ABV
