What are Cornish earlies? What is their flavour?
Small to medium new potatoes.
Buttery tender texture, fresh earthy, slightly sweet flavour
How are the Cornish Earlies cooked?
Boiled in water with salt, white wine, garlic, and herbs like rosemary, thyme, bay leaf, peppercorns. Skin on
What potatoes are used for the potato puree? How are they cooked?
Red potatoes. Steamed at low temp, then chilled, then boiled. This prevents it from becoming gluey
What are the ingredients in the potato puree?
Red potatoes, garlic-infused clarified butter, milk, cream
What garnishes are on the Cornish Earlies?
Picked dulse, picked cucumber julienne, shelled broad beans, lovage oil, lovage leaves, chives
What is lovage?
A fresh herb, tastes like celery and parsley but more intense and a little “spicy”
How are the Cornish Earlies reheated?
Reheated in a butter/water emulsion before serving
