A brief description of the Morel dish
Pan fried, filled morels stuffed with a mousseline of chicken, mushroom and wild garlic. Served with a wild garlic fluid gel, mushroom ketchup, chicken oysters and parmesan foam. Presented with mushroom tea and mushroom chip
Flavour of morels?
Earthy, woodsy, nutty
What is the chicken mousseline?
Pureed chicken breast and cream.
With chopped mushrooms, wild garlic leaves and oil, and fino sherry
How are the morels cooked?
Steamed, then filled, then steamed. Then pan fried in butter and fino sherry
What is in the wild garlic fluid gel?
Onions, chicken stock, milk and cream.
Fresh wild garlic, garlic oil. Set with gellan f
What is in the mushroom stock?
Chestnut and fresh and dried shitake
What is in the mushroom ketchup?
Shallots and garlic, sugar.
Mushrooms leftover from stock.
Worcestershire, sherry vinegar, soy sauce, oyster sauce
What is the mushroom drink?
Reduced mushroom stock, infused with sherry vinegar, thyme and orange peel. Served cold
What is the mushroom chip?
Dehydrated and fried mushroom ketchup, seasoned with mushroom powder, wild garlic powder, crystallized chocolate
What is in the parmesan foam?
Caramelized parmesan, deglazed with soy milk. Stabilised with soy lecithin
How is the chicken oyster cooked?
Confit, then breaded and shallow fried in clarified butter
What other garnishes go on the Morel dish?
Crystallized chocolate, pickled shimeji, wild garlic powder, mushroom powder, flowers
