What is sea bream? What does it taste like?
Large whitefish, with a mild, delicate slightly sweet flavour and flakey texture
What kind of sea bream do we use?
Gilthead sea breem
How is the fish for the Sea Breem prepared?
Filleted, marinated for one hour, charcoal grilled until mi-cuit (half cooked)
What is in the marinade for the Sea Breem?
Rice vinegar, white miso, soy sauce, orange zest, coriander seed
What is red pepper water?
Red peppers are charred, peeled and blitzed with espelette pepper vinegar, Tabasco and salt. Then left to drip out water overnight.
What are black radishes? How do we prepare them?
A large, tough-skinned radish with white flesh. Spicy taste and crisp texture. We slice on a mandoline, then pickle them
What are the radishes picked in?
Classic sweet pickle - water, sugar, vinegar and rice vinegar
What is in the radish parcels?
Diced kohlrabi, cucumber, granny smith apple, red pepper water pulp
What is in the green herb sorbet?
Sugar, lime, tarragon, mint, coriander
What are the other garnishes on the Sea Breem?
Red pepper oil, kohlrabi and fennel brunoise, orange zest, crushed coriander seed, mint oil
