What is an emulsion sauce
A fat suspended in another liquid
Types of emulsion sauces?
Stable - mayonnaise, hollandaise, beurre blanc
Unstable - vinaigrette
Mayonnaise ingredients?
1 yolk : 150ml oil
Vinaigrette ingredients?
3 parts oil : 1 part vinegar
Hollandaise ingredients, and how to make?
50ml wwvin 50ml water 6 peppercorns 1 bay 1 mace Salt 3 yolks 150g butter Lemon juice Salt and GWP
Reduction by 2/3rds
Yolks, 1 cube butter, 1tsp reduction, beat
Over to Bain marie, beat in 1 cube butter at a time
Season
Beurre blanc ingredients, and how to make?
50ml wwvin 50ml water Half shallot 200g unsalted butter Lemon juice Salt and GWP
reduction, strain, 3/4tbsp, add cold cube after cold cube to small pan, beating vigorously til pale, with creamy consistency
Daughters of mayonnaise?
Tartare (gherkins, capers, parsley, shallot)
Aioli (garlic)
Gribiche (hardboiled eggs, capers, shallots, tarragon, parsley, chervil)
