What is a roux?
A
An equal quantity of butter and flour used to thicken a known quantity of liquid

A
20g butter
20g flour
300ml milk
Melt butter, add flour, stir 1 minute
Add milk slowly
Boil, reduce heat, simmer 2 minutes
