What is espagnole sauce?
A
Sauce for meat made from brown stock and brown roux
Brown flour first for speed and flavour

How do you make espagnole sauce?
A
Brown flour Fry off bacon Brown veg to deep golden (NB overcooked carrots / too much purée too sweet!) Add tomato purée Add stock, mushrooms, bouquet garni, bring to simmer Simmer 1.5 - 2 hours Skim fat only (not flour)
