What are enzymes?
Compounds with specific structure(modified protein)
What are the properties of enzymes?
Speed up chemical reactions by reducing the activation energy,also called catalysts
Not used up or destroyed in a reaction
Have a specific shape(active site)
Act on a specific substrate which us the reacting molecule
Break down or build molecules
Sensitive to pH and temperature as they are also protein
Operate by lick and key theory
What are the factors that affect enzyme activity?
Temperature
If temperature us low the there will be low activity
Optimum is 40°C
If temperature goes above 40 the enzyme will denature
pH
If the pH is low there be will be low activity
Optimum depends on location
When pH is high the enzyme will denature
What are enzymes working with protein,carbohydrate,and lipids called?
Protease,carbohydrase and lipase
Enzymes in our everyday life
Enzymes in yeast are used in the baking and brewing industry
Enzymes called remain is used to make cheese
Digesting enzymes
Protein digesting enzymes are added to washing powemder to remove stains on fabric
Carbohydrate digesting enzymes are used to change starch into sugar to be used as sweeteners in processed food
Fat digesting enzymes are added to washing powders to act as stain removers
