What are the requirements for white production?

A

Savagnin and or Chardonnay must make up a minimum of 80% of the blend.

A

What are the requirements for Vin Jaune production?

A

Only Savagnin can be used.
Max yield is 60hL/ha, except in Chateau Chalon, it’s 30.
Wine must be aged under voile for 60 months, during which time it can’t be racked or topped up, and can only be sold in January 7 years after harvest.
Wine must be bottled in 62cl clavelin bottle, an exception to EU legislation for standard bottle sizes.

What are the requirements for Vin de Paille production?

A

Can be made from all varieties except Pinot Noir.
Wines must be above 14%
RS is typically 70-120g/L.
Must be aged for a minimum of 18 months in barrel, and released no sooner than 3 years after vintage.
Max yield is 20hL/ha.
