What grapes used to be found in Frascati, and which are now able to be found in the DOC? What are the maximum yields?

Which varieties are found in Superiore DOCG, and how do the yields compare?

A

Previously predominantly Malvasia del Lazio.
Today, Frascati DOC can be made from either Malvasia Bianca di Candia +/ del Lazio, providing that together or separately they make up 70% of the final blend. (The same in Superiore DOCG)
Trebbianco Toscano can make up a maximum of 30% of the blend.

What different profile can wines from Frascati DOC have?

A

Wines with more flavour are produced with more Malvasia del Lazio in the blend.
Wines with Bianca di Candia are often preferred as it has higher disease resistance and yields.
Wines with more Trebbiano Toscano are cheaper to produce but with lower flavour intensity, as it can be a neutral, high yielding variety.
Wines at their maximum high yield (105hL/ha) are light in flavour intensity.

How is Frascati DOC typically made, and what’s the general quality and price?

A

Cool fermentation temperatures to retain primary fruit. The wines are stored briefly in steel before being released to consume within a couple of years.
Acceptable to good, some v good. Inexpensive to mid.

A

Covers a broad area south of Rome and has many other DOCs within it, including Frascati.
More white is made than red, and these must be from Malvasia del Lazio/Bianca di Candia and Trebbiano Toscano.
120hL/ha, resulting in light flavour intensity.

A

Merlot and Sangiovese lead by volume of production, which are mostly inexpensive and consumed locally.
DOCs predominantly are made from Cesanese, eg Cesanese di Affile DOC.

What are requirements for the Cesanese denominations? What is typical winemaking, quality and price?

A

Yields are up to 65-70hL/ha, resulting in low flavour intensity.
Typically aged in steel, as additional oak flavours would mask the varietal aromatics.
Wines are mainly mid priced with a few premium examples, eg Damiano Colli.
