Please explain Amarone Della Valpolicella

A

They use passito method; early pick grapes in high acidity let to dry in door to increase structure and flavour concentration and sugar.
And than fermentation starts..
Dry, off dry.
Full body high alcohol, medium to full bodied.
Intensely concentrated red berry and spice flavours.
Recioto della Valpolicella are made from grapes are so sweet the fermentation stops naturally.

Recioto di soave made from soave grape.

Please explain Valpolicella Ripasso

A

Shortly before finishes the Amarone is drained of the skins. The skins remain unpressed are added to a vat of Valpolicella that has finished its fermentation. Yeast which are also transferred in this process, ferment the remain sugar on Amarone grape skins, grape skins give more colour, flavour and tannins to the wine.
