A

literally straw wine – is the sweet wine of Jura. Vin de Paille is mostly made from Chardonnay, Savagnin and Poulsard grapes – usually in equal proportions. Occasionally Trousseau is used too – Pinot Noir is not allowed.

how do you make Vin de Paille?

A

Grape clusters are dried for a minimum of six weeks – this concentrates the sugars. They are then pressed and fermented between December and February. Vin de Paille is aged for at least 18 months in barrel and can be released after 36 months. Vin de Paille is sold in half bottles (375 ml).

what is Macvin?

A

It is fortified grape must – a mistelle like Pineau des Charentes and Floc de Gascogne. The must is either fresh or partially fermented and is fortified with marc – this marc has to be made from Jura wine and be barrel-aged for 14 months. Macvin is aged for a minimum of 10 months in barrel. All five of the white and red authorized grape varieties in Jura can be used and Macvin can be either red, white or rosé. It is released with a final alcohol content of 16-22% by volume.

A

Chardonnay, Savagnin, Pinot Noir, Poulsard and Trousseau are all permitted – Pinot Gris can also be used for Crémant.

Most Crémant du Jura – 88% – is white and much of it is 100% Chardonnay. AOC law requires that white Crémant must contain at least 70% Chardonnay, Pinot Noir and/or Trousseau.

Rosé Crémant du Jura must contain 50% or more of the red varieties and/or the rare Pinot Gris.
