min 60% combined Grenache(20%) and Carignan(20%), min 10% combined Syrah and Mourvèdre
(no grapes account more than 80%)

two principal soils:

  1. Fitou Maritime (coastal clay and limestone around the saltwater lagoons)
  2. Fitou Montagneux (24KM inland, mountainous schist)

min combined 70% Grenache, Mourvèdre and Carignan (30-50%), plus Syrah

Carignan must be hand harvested (more Carignan dominant)

(at least 2 varieties blended, min 40% principal varieties)

required 0.5% higher alcohol than Minervois AOP

What is Limoux AOP?

A

BLANC / ROUGE, STILL / SPARKLING
(Western Languedoc)

blanc: Mauzac, Chenin Blanc, Chardonnay (still white must fermented in oak)
rouge: min 50% Merlot, plus Syrah, Grenache, Cot (min 3 varieties blended)
sparkling: METHODE ANCESTRALE / BLANQUETTE de LIMOUX

Methode Ancestrale: 100% Mauzac (no enrichment, tirage and dosage, 2 months on lees)
Blanquette de Limoux: min 90% Mauzac, plus Chardonnay and Chenin Blanc (traditional method, 9 months on lees)

Chardonnay (min 50%), Chenin Blanc (10-40%), plus combined Mauzac and Pinot Noir

has two subzones: (rouge only)
