What are lipases?
Enzymes that hydrolyze lipids.
What is saponification?
The reactions of glyceryl ester with sodium or potassium hydroxide to produce a soap, which is the corresponding salt of the long-chain fatty acid.
What is phosphatidic acid?
A compound in which two fatty acids and phosphoric acid are esterified to the three hydroxyl groups of glycerol.
What is a phosphoacylglycerol?
A phosphatidic acid with another alcohol esterified to the phosphoric acid moiety.
What characterizes phosphatidyl esters?
They have long, nonpolar, hydrophobic tails and polar, highly hydrophilic head groups, making them markedly amphipathic.
What are some important types of phosphatidyl esters?
Phosphatidyl ethanolamine (cephalin), phosphatidyl serine, phosphatidyl choline (lecithin), phosphatidyl inositol, and cardiolipin.
What does the classification of a phosphatidyl ester depend on?
The nature of the second alcohol esterified to the phosphoric acid.
