- they are water insoluble and soluble in non-aqueous solvents
they are found in different organs but not in the plasma
Proteolipids
- Derivatives obtained via hydrolysis of simple and compound lipids.

Saturated fatty acids = solid at room temperature, animal origin, carbon to carbon single bonds
Unsaturated fatty acids = liquid at room temperature, vegetable or plant origin, at least one carbon to carbon double bond
