What pairs with the Hay Smoked King Fish?

A

Bunya nut Fizz.

Bunya nuts are blended with water in the thermomix, to a smooth consistency. The resulting liquid is passed through a super bag to remove the pulp, which is discarded. This is then heated in a pan and sugar whisked in over an induction.

The bunya syrup is then shaken with lemon juice before being topped with Soda water and a lemon zest

Making Process
Beetroot is cooked sous vide with dried Davidson plum flakes, verjus, sugar and water. The finished cordial is served in a tequila glass topped with Vichy Catalan

Making Process
Seedlip garden 108 is cook soul vide with lemon oleo saccharum, fennel seed, fresh fennel, hops, verjus and water. Once cooled it is passed through a super bag followed by a v60 filter. The resulting liquid is force carbonated and bottled.
